In a container or sink, submerge the plank(s) for at least one hour and as long as 4 hours.
Prepare the BBQ. It is ready for grilling when the heat is about medium-high or 350-425 degrees. At this temperature the plank will give off a slight smoke
A well soaked plank will have rich colors tones throughout the grain.
Now it is time to place your prepared food on the grill. Time for grilling.

Most experienced grillers know the best way to cook for flavor and tenderness is by the indirect method. Put the plank over a portion of the grill that is only getting indirect heat.
We find the best way to cook with the planks is to put one or two planks on the grill over the coals or burner. Shut the lid for about 10 minutes or until the grill appears to be smoking
At this point open the lid and place your food on the grilling planks
Serve at the table on the plank (wonderful presentation) or serve at your pleasure. Bon Appetite
In most cases the plank will have charring on the bottom. Usually you may have 3-4 more uses. Or, if too badly charred, break the plank into pieces and add it to your charcoal for the next BBQ.
